Broccoli or Cauliflower Bake
If you like broccoli or cauliflower…
chop up and render down 3-4 (more if you like) slices of bacon in a large skillet.
Break up and steam your broccoli, cauliflower or both.
Only steam until slightly soft, not mushy.
Stir the cooked veggies in the bacon grease until coated.
If it looks a little dry toss in a little butter.
Cover with shredded cheddar ( or your favorite cheese).
Broil until melted and bubbley.
If I’m serving it at a family dinner I transfer the mix into a nice glass baking dish before adding the cheese.
Quick easy and always a big hit even with the non low carb crowd.
Most diets cause you to use “will power” to eat less, but this doesn’t work for long for most people.
