Ditch The Carbs – how it all began



This is a guest post from Libby at “Ditch the Carbs”, which I think is one of THE BEST low carb high fat recipe and advice blogs on the internet. I asked Libby to tell me how DitchtheCarbs.com got started and her own personal story.

Below is Libby’s story and some fantastic recipes:


I have been on and off diets all my life, my earliest was the Scarsdale diet when I was 11. For the next 30 years I would meticulously count calories or points to lose weight, but my diet was unhealthy. I would eat cake and junk food as long as it was within my calorie or points allowance. I started running half marathons, eat my wholegrain sandwiches, plenty of fruit, vegetables, trim milk and low fat food. After each half marathon I hadn’t lost a single gram/ounce of weight. Nothing.

In 2013 I attended various lectures and workshops where I discovered LCHF [low carb, high fat]. It led me to question everything I have ever known about food. The workshops were run by Professor Grant Schofield, Dr Caryn Zinn and Dr Mikki Williden who are part of the Human Potential Centre at AUT (Auckland University of Technology). They are world leaders in LCHF advocacy and research. They encourage us to get out there and spread the LCHF message. “It’s up to all of us”. Worldwide there is an amazing group of scientists, doctors and health professionals who are trying to re-educate the public and change our idea of what is ‘healthy eating’. It is incredibly difficult because of the huge influence companies, lobbyists, corporations and ‘old school’ way of thinking has on the entire food industry.

For the first time EVER, I am in control of my appetite and actually want to eat real food. The processed food is gone and I no longer count points or calories. My weight has been stable for well over 18 months now and I weigh under my Weight Watchers goal, whereas I would struggle to even reach my goal weight. There are no processed foods, only wholesome, clean foods that help me to lose weight and prevent the big 4 – heart disease, diabetes, alzheimers and cancer.

I am a registered pharmacist and wanted to retrain as a dietician or nutritionist so I could teach others what I have learnt. Sadly there are no low carb degree courses. I would have to learn the traditional low fat food pyramid and all the low fat advice just to gain some qualifications whilst doing my own LCHF research. It would have cost me $10,000’s, impacted incredibly on the family and I would have probably ended up working part time helping only a few people. So therefore, Ditch The Carbs was born.

I started the website in February 2014 and it has grown incredibly fast. It is the number 2 recipe website in New Zealand. Ditch The Carbs has reached over a million page views, I have written an eBook and been mentioned and are incredibly proud to have been shared by some of the most respected low carb authors and websites. As a mum of 3 children, I soon knew I wanted us all to eat this way so had to re-invent all our old recipes. Gone are the sandwiches, toast, cakes, biscuits and sweets. It’s hard work, but so worth it. My youngest son really doesn’t like vegetables and is the hardest one to please, but this has only made me more determined to continue and improve his diet.

Ditch The Carbs helps families in practical ways to make the change to eating LCHF (Low Carb High Fat, Low Carb Healthy Fat), plan meals and get inspiration. When I started eating LCHF, it was hard to find family friendly recipes especially school lunch box ideas. I wanted my site to help others make the transition of going low carb as easy as possible. I feel so strongly about children eating real food and getting off the soda, sweets, fruit juice, pizza, pasta and fries. We all want our children to grow up with an incredibly healthy attitude towards food and nutrition. Sure they can have treats, but they know the importance of eating well.

Ditch The Carbs helps you MAKE “REAL FOOD, REAL EASY”

LCHF is all about eating clean, unprocessed, low carb whole foods. LCHF (Low Carb Healthy Fat) will help you lose weight, gain control of your appetite, and increase nutrition by making simple swaps from processed carbs (like bread, pasta, cakes) to whole food nutrition. There are no downsides for this, there are no side effects, and the improvement in your weight and health is unbelievable. Once you learn how detrimental some foods are to us, there is no going back. You will feel amazing. Don’t worry, you can have occasional treats, but the point is you won’t want to and that has been a game changer for me. The treats become less often, and less appealing. This why I believe LCHF is just so successful, especially long term. Eventually you are not attracted to cakes, biscuits and stodgy foods like pasta and rice.


Don’t eat CRAP – Caffeine, Refined, Artificial, Processed.

  • Eat low carb
  • No sugar
  • No wheat
  • No grains
  • Eat more vegetables
  • Eat more greens
  • Eat more healthy fat

  • But, you don’t know my whole story until you understand I lost 145 lbs with both Butter AND Fasting.
  • Most diets force you to use “will power” to eat less, but this doesn’t work for long.
  • A better way is eating healthy fats, like Butter, which turn off the “out of control hunger urges” that you’ve struggled with all your life.
  • This gives you complete appetite control.
  • This appetite control gives you freedom without using “will power” and enables you to do what is called “intermittent fasting“.

    Thanks for the story Libby.

    I was never ‘fat’. I have been relatively lean my whole life.

    However, what I noticed after I ditched the carbs is that my energy levels are stable throughout the day, I can focus better and I get snackish.

    Before ditching the carbs I would be so tired by afternoon, I couldn’t concentrate on work and would just want to sleep.

    Hi Bob,
    A good friend is in a situation similar to your former wife’s. She has mental health issues and is on pretty high medication. and sh is very overweight, even though she used to be really slim.
    Can you recommend what she can do? Can one lose weight when on medication for depression, or other mental health issues? Her husband is diabetic and very overweight and is on insulin. What can people do in that situation?

    We made your chili recipe. He hadn’t planned on it but we ate it for both meals 3 days in a row. OMG unbelievable good!!! We ended up freezing what little was left and a few days later made another pot to package up and freeze for this winter. We are both 65 yrs old and have never had anything that we ate for 3 days solid. Bravo !!!.
